Toothpick Kebabs,
Also Known As "Kebab Koobideh," are a popular Persian dish made with
ground meat, typically lamb or beef, and a variety of spices. Here's a recipe
you can try at home:
1 medium
onion, grated or finely chopped
1 egg
1 tsp salt
1/2 tsp
black pepper
1/2 tsp
turmeric
1/2 tsp
cumin
1/2 tsp
coriander
1/4 tsp
cinnamon
1/4 tsp
nutmeg
1/4 tsp
cardamom
1 tbsp
vegetable oil
Instructions:
Cover the
bowl with plastic wrap and let it rest in the refrigerator for at least 30
minutes to allow the flavors to develop.
Preheat the
grill or broiler to medium-high heat.
Divide the
meat mixture into 8-10 portions and shape each portion into a long, thin
sausage shape.
Insert a
toothpick through each sausage shape, about 1 inch from each end.
Brush the
kebabs with vegetable oil and place them on the grill or under the broiler.
Cook for
8-10 minutes, turning occasionally, until the kebabs are golden brown and
cooked through.
Serve hot
with flatbread, rice, and/or salad.
