The Recipe Of The Şırdan Dish

Dish has a unique texture and flavor and is a popular delicacy in Turkey. 

Here is a recipe for şırdan:


 1 kg lamb or goat intestines

2 onions, chopped

2 garlic cloves, minced

2 tomatoes, chopped

2 green peppers, chopped

1 tablespoon tomato paste

1 teaspoon red pepper flakes

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons vegetable oil

Lemon wedges for serving


 Clean the intestines thoroughly by removing any excess fat or membranes. Wash them well and soak them in cold water for at least an hour.

 In a large pot, bring water to a boil and add the intestines. Cook for 15-20 minutes until they are tender. Drain and let them cool.

 Once cooled, chop the intestines into bite-sized pieces and set aside.

 In a large skillet, heat the oil over medium heat. Add the chopped onions and sauté until they are translucent.

 Add the minced garlic and cook for a minute until fragrant.

 Add the chopped tomatoes and green peppers and cook for 5-10 minutes until they are soft.

 Add the chopped intestines to the skillet and stir well.

 Add the tomato paste, red pepper flakes, cumin, salt, and pepper. Mix well and cook for another 10-15 minutes until the flavors have melded together.

 Serve hot with lemon wedges on the side.
