 Mumbar is a traditional Middle Eastern dish made with lamb, rice, and spices, often served during special occasions or celebrations. Here's a recipe to make mumbar:

 Ingredients:

 1 lb ground lamb

2 cups white rice

1 onion, finely chopped

1/2 cup chopped fresh parsley

1/2 cup chopped fresh mint

1/2 teaspoon ground cinnamon

1/2 teaspoon ground allspice

1/2 teaspoon ground cumin

Salt and pepper, to taste

2 tablespoons olive oil

Water, as needed

Instructions:

 Rinse the rice in a strainer and soak it in a bowl of water for about 30 minutes. Drain and set aside.

In a large bowl, mix together the ground lamb, chopped onion, parsley, mint, cinnamon, allspice, cumin, salt, and pepper until well combined.

Take a small amount of the lamb mixture and stuff it inside the lamb casing, using your fingers to shape it into a sausage. Repeat with the remaining mixture and casings.

In a large pot, heat the olive oil over medium-high heat. Add the stuffed lamb casings and sauté for about 5-7 minutes until they are lightly browned on all sides.

Add the soaked rice to the pot and stir to combine. Add enough water to cover the lamb and rice by about an inch.

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 30-40 minutes, or until the rice is cooked and the lamb is tender.

Serve hot, garnished with additional chopped parsley and mint, if desired.
