Çökertme Kebab İs A Traditional Turkish
Dish that is typically made with lamb or beef, tomatoes, peppers, and onions.
Here is a recipe for making çökertme kebab at home:
2 onions, sliced
2 tomatoes, chopped
2 green bell peppers, sliced
1 red bell pepper, sliced
4-5 cloves of garlic, minced
2 tbsp tomato paste
2 tbsp olive oil
2 tbsp butter
Salt and pepper
1 cup water
For the yogurt sauce:
1/2 cup water
2 tbsp chopped fresh parsley
Salt and pepper
Instructions:
In a large skillet, heat 2 tbsp of
olive oil over medium-high heat. Add the meat and cook until browned on all
sides, about 5-7 minutes.
Remove the meat from the skillet and
set aside.
In the same skillet, add the sliced
onions and cook until they are soft and translucent, about 5 minutes.
Add the chopped tomatoes, bell
peppers, minced garlic, tomato paste, salt, and pepper to the skillet. Cook for
about 10 minutes, stirring occasionally.
Add the cooked meat back to the
skillet and mix well.
Transfer the meat and vegetable
mixture to an oven-safe dish and spread it out evenly.
Pour 1 cup of water over the top of
the mixture and place the dish in the oven.
Bake for about 25-30 minutes, or
until the meat is tender and the vegetables are cooked through.
While the kebab is cooking, prepare
the yogurt sauce. In a small bowl, mix together the yogurt, water, chopped
parsley, salt, and pepper.
Once the kebab is cooked, remove it
from the oven and let it cool for a few minutes.
To serve, spoon the yogurt sauce
over the top of the kebab and garnish with additional parsley if desired.
